CURSO PASTELERIA I

El pasado 19 de Septiembre se llevó a cabo el curso Pastelería I con un total de 8 horas reloj a cargo de la capacitadora Rosalinda Baiardi,  en las instalaciones de la Escuela Azafran.

El objetivo del curso consistió en capacitar y actualizar los conocimientos del profesional como tambien brindar las herramientas necesarias para la creación y el desarrollo.

Dentro de la metodología se utilizaron técnicas de amasado, bollado, principios del hojaldrado, estivado, fermentación, terminación, tiempos de cocción, modo de cocción y presentación. En el curso se realizaron las siguientes recetas: Pan Brioche, Focaccia, Cremonas de anís y amapolas, Pan multicereal, Panes saborizados, Facturas de manteca, Medialunas de manteca, Hojaldre francés y Hojaldre escocés. Ademas se utilizaron los siguientes Medios Didácticos: Uso del horno, sobadora, fermentadora, cortantes y moldería para panificación.
